Wild Turkey Biscuits and Gravy

To make the sausage:
3/4 lb Wild Turkey Breast
1/4 lb of Pork Shoulder
Hi Mountain Breakfast Sausage Kit
Cut the wild turkey and pork shoulder meat into 1” pieces and run through the grinder. Add the
correct amount of Breakfast Sausage seasonings for 1lb of meat, as per instructions, and mix
well into the ground meat. After mixing run the seasoned ground meat through the grinder one
more time. You are now ready to make into biscuits and gravy.
To make the biscuits and gravy
1 can of Refrigerated Biscuits
1 lb of Turkey Sausage
1/3 cup all-purpose flour salt
1/2 TS
1/4 TS ground pepper
3 cups of milk

Heat the over to 350 degrees and bake the biscuits as per package instructions.
Crumble the turkey sausage into a large skillet. Cook over a medium-high heat until all the meat
is browned while stirring frequently. With a wire whisk, stir in the salt, pepper and flour. Next stir
in the milk and cook until the mixture thickens. It’s important to stir frequently in this last stage of
cooking.

You are now ready to split open the hot biscuits and pour on the gravy and enjoy!
